Grape variety and terroir
In Saint-Amour, Beaujolais meets Burgundy. For over 80 years, our Chardonnay parcels have found their place on the hillside around the Church. The clay, stony and flint soil favours mineral expression but also a lot of roundness in our white wines. Exposed to the East and South, the vineyard, swept by the winds, enjoys a privileged sunshine, essential for the berries good ripening.
Vinification and ageing
The grapes are picked and sorted by hand. Grape pressing on pneumatic wine press, gentle settling to eliminate gross lees. Alcoholic and malolactic fermentation in thermo-regulated cement tanks. Ageing in cement tanks on fine lees for 6 months. Bottling in June following the harvest.
Tasting
2017: This vintage characterized by a hot and sunny summer favors a very supple chardonnay round on the palate with white peaches aromas.
Food and wine pairing
Service at 12 ° degrees Celsius with eggs casserole, fish terrine, chicken with cream.
